best viewing order is to READ the Visual novel of Fate/Stay Night first. Paring that you don't want to do that, Watch the UBW anime first (cause it's well done), then wait till heaven's feel is released for viewing, maybe (I a really mean maybe) watch the DEEN 2006 anime to get a basic understanding of the fate route, and THEN watch Fate/Zero.

If you want to follow the “proper” order, you should watch first Fate/Zero, then Fate/Stay Night UBW from ufotable (not the movie version) and finally the movie Fate/Stay Night: Heaven’s Feel. Why Watch It? Arguably one of the best prequel anime out there, Fate/Zero is a great way to look at the Holy Grail War from the perspectives of more mature audiences . Unlike Shirou Emiya and his desire to be a hero, Kiritsugu Emiya has a darker look at the world – something reflected by most other participants in the war and certainly evident throughout the series. Despite being an overall above-average anime, many still believed that ‘Fate/Stay’ was not really able to do full justice to its source material.

These versions are not as good as the main series but can still be enjoyable if you’re familiar with a few characters. Also, these alternate versions have been produced by different studios, so don’t be surprised if you notice a variance in its animation compared to the main series. When it comes to ‘Fate/Apocrypha’, though it is set in an alternate universe and has an entirely different story that does not revolve around the Holy Grail, I would still recommend watching ‘Unlimited Blade Works’ right before it just to have a bit of an idea about what is going on.
