Which anime raised YOUR standard for anime? It doesn’t necessarily have to be your favorite or highest-rated anime, but the one that substantially raised the bar for you during your anime journey. Could be in terms of plot, character development, art, music, and/or whatever.
An Original Net Animation (ONA) is an anime that is directly released onto the Internet(1) while an Original Video Animation (OVA) is an animated film or series made specially for release in home-video formats.
Like anime made for television broadcast, OVAs are sub-divided into episodes. OVA media (tapes, laserdiscs or DVDs) usually contain just one episode each. Episode length varies from title to title: each episode may run from a few minutes to two hours or more.
OVAs are often shorter than a normal episode of the show, while Specials are often as long or longer, although this definitely doesn't always hold. Some OVAs are not associated with a show, so they aren't a "special episode" of anything.

Some of the creators produce OVA stories relevant to the original anime series, making them canon. Without watching such an OVA that is canon, you might miss some vital part of the story of the original series. Due to which if the OVA is canon, you should watch it to have a better idea of the original anime series.
Ilse's Notebook is canon. The second OVA is a "just for fun" thing, it's not really canon. The third OVA doesn't really impact the story or change anything, so you can consider it to be canon.
