Rurouni Kenshin or Samurai X (as it was called on Animax) has one of the best OSTs ever. Especially the Warrior's suite which was part of OST1 is clearly one of the best protagonist themes ever. One Piece doesn't have many great OSTs but Overtaken is used at significant points of the series that make it awesome.
Macross has an amazing soundtrack, both the orchestral music work of Youko Kanno and the vocal work by these two talented pop idols, and Macross Frontier makes the best use of it by delivering some really unforgettable dogfights as the two songbirds urge the fighter pilots along. Noir.
Yoko Kanno 's style is full of surprises , ranging from jazz to pop to orchestral - of which Cowboy Bebop must be the most well-loved for its jazzy beats. My favourite from hers had to be Earth Girl Arjuna 's soundtrack, for its beautiful take on the anime's Hindu influences.

But Haikyuu is something special when it comes to music. It’s done by the great Yuki Hayashi (with collaboration from Asami Tachibana), an underappreciated legend who hasn’t quite amassed a fandom like Youko Kanno, Hiroyuki Sawano or Yuki Kajiura.
There’s a lot of great anime out there with great music. But there are very, very few that have truly sublime music. These are anime whose music is really on another level and really accents the scene and brings it to a level you never thought possible.
