It's possible that the only anime character who can defeat Saitama is another superpowered parody character like Arale Norimaki of Dr. Slump or Saiki Kusuo of The Disastrous Life of Saiki K.
As a parody character who can defeat anybody with a single punch, Saitama of One Punch Man is one of the strongest characters in the anime universe. But is he really impossible to defeat?
Sure, Saitama can chase Light down the streets in typical shounen style, but Light is way too smart and cunning to let a simpleton like Saitama catch him so easily. Pre-God Work, Griffith was just an unusually gifted mercenary.
He’s blessed with a plethora of powers. The most effective one he can use against Saitama’s punches would be the ability to manipulate causality itself. Here, no physical attack can touch him, which means he would basically come out unharmed.
The name One Punch Man is self-explanatory. For those who haven’t watched this anime, it’s about a man named Saitama whose one punch is able to defeat anybody who comes in his way. He’s a superhero just for fun since there is no charm in fighting people he knows he can defeat easily.
Saitama is a very physical superhero, where the only way he can defeat someone is by physically punching them. What would happen if his opponent is someone who doesn’t need to be near him to defeat him?
Light Yagami’s Death Note is the ultimate weapon he has with him. Basically, all he has to do is lift his fingers, jot down Saitama’s name, and Saitama would be dead. Sure, Saitama can chase Light down the streets in typical shounen style, but Light is way too smart and cunning to let a simpleton like Saitama catch him so easily.
Superman’s only weakness is kryptonite. If Saitama is unaware of this very crucial fact, there is very little he can do to defeat Superman. This guy can use laser vision, hypnotize people, wipe people’s memories, move humungous objects via telekinesis, and so much more.
His defense mechanism against Saitama (assuming Saitama would even be able to land a punch on him) would be his impenetrable barrier. This barrier has the ability to reverse all vectors that cross his path, which would include Saitama’s mighty punch as well.

The sheer concept of The Spectre is so immense that this spirit needs to be bound to a human spirit so its unbridled energy doesn't just destroy everything. Most importantly, physical attacks are basically pointless against the Spectre, which leaves Saitama out of luck.

Of course, the point of these characters are much different — Goku is about breaking limitations and Saitama is about parodying the overpowered nature of characters like Goku — but if we're ignore that for a minute, Goku could definitely give Saitama the challenge he so desperately craves.
This is another fun one that's more of an interesting argument than a logistically sound one; nonetheless, the very nature of Shota Aizawa's power implies he might be able to hold off Saitama before he could even attack. Aizawa, also known by his hero name, Eraser Head, has the power to "erase" the Quirk (superpower) of whoever he is looking at, a power that could stop Saitama with ease.
Mob's psychic power allows him to move objects with his mind, a power that would make a fight against Saitama last more than one punch, since he could attack from a distance and maybe get a few hits of his own in before the final blow was thrown.
Toriko has been shown punching through massive boulders, carrying a city-sized amount of cooking ingredients, launching opponents around the planet and much, much more. Saitama might still be stronger, but Toriko wouldn't go down with just one punch.
4 TETSUO. This is to say that Tetsuo's psychic abilities are other-worldly in strength, and the very nature of telekinesis allows him to fight from a distance, which would give him a fighting chance against Saitama, even if it was only for a few minutes.
Not to be confused with the Alucard of Netflix's Castlevania, this Alucard is from Hellsing and he is actually Count Dracula himself after becoming servant to the Hellsing family following his defeat. Alucard has a wide variety of abilities on top of his immortality, some that we think might give him a fighting chance against the likes of Saitama.
