You don't need to and it's not recommended to buy them until you're done with the final route. Any item that says "can be sold for money" is safe to sell and isn't required in any sidequests or weapon upgrades. Obviously sell any EXP gaining chips once you reach level 99. Fishing isn't really important.
Nier is nothing like any souls game. It can kind of be like a bullet hell game sometimes. It's no where near as difficult as dark souls. Just a heads up. The opening section in the desert can be a bit tedious if not boring. But once you get passed that section the game will become much more enjoyable. Not nearly as hard as Dark Souls.
Though not as fantastic as everything else about the game, NieR: Automata still has an excellent presentation factor. The graphics, while not industry-leading, still look great, especially if you're playing on an Xbox One X. But where the title really shines is with its animations and its soundtrack.
