Even if something is official, it doesn’t necessarily have to be canon. The best example is the dragon ball or dragon ball z movies. They are official because they were created by toei and supervised by Akira Toriyama, but their events cannot be canon, because they contradict those of the main story that we saw in the manga

It's all canon. And in many ways, the anime fills in several blanks that the manga leaves open. The Mujina bandits arc is a great example. And the Mitsuki retrieval arc was pretty great (when you binge it and don't have to wait week by week) in my opinion. It added a lot to Mitsuki's character, and I personally enjoyed it.

And if an anime show does not follow its manga for a certain number of episodes that part will not be considered canon. In short, as long as the anime stays true to its manga, it will be considered canon. Those episodes will be called fillers.
Manga is considered the actual story and Anime, Movies, or Games are believed to be an adaptation of the Story, but different in various ways. Manga canon is what happens in a series and it is the actual and original story, whereas Anime canon changes itself or adds stories to it.

In case you really wanted to know: that means that 58% of Naruto is canon and 55% of Shippuden is canon. Alternatively: 314 episodes are pure filler, of a 705 episode series. (i counted to shippuden 485)
For those of you who only watch the English dubbed, the latest episode on Crunchyroll is episode 361 of Naruto Shippuden. The episodes that aren't listed are filler only and therefore you don't need to watch them. Hopefully this list helped you out. (edited by Sanbi221)
