However, in the season 2 finale of the anime (AKA Tokyo Ghoul √A) Hide sustained a fatal injury at the hands of ghoul Noro and died in Kaneki’s arms.

Normally this would mean that Hide dies, but no, Hide comes to life for a third time. He is seen at the end of the Manga, crippled but still moving. However, his injuries took their toll, and he has to use a special device to speak. Nobody knows, cuz they screwed up the anime more than Arima screwed up Kaneki’s brain.
So, despite his apparent death in the anime's second season, Hide is indeed alive and well in the Tokyo Ghoul manga and anime series thanks to a whole load of retconning.
Hide is a normal human being that studies in Kamii University. During his studies, Hide decided on being an assistant of Koutarou Amon and Akira Mado helping them on ghoul research. Hide is 19 years old and his height is pretty much normal for someone his age, his hair is blond and disordered and his eyes are brown.

But, the very act of wearing specific masks speaks to the broader treatment of identity on Tokyo Ghoul, which is to say that each individual mask is an expression of a character's “true” identity rather than just a means to hide it.

If we’re talking about the original Tokyo Ghoul, technically it could be Arima.
Eto is the daughter of Yoshimura, The Peaceful Owl (leader of Anteiku) and is ranked a SSS Kakuja ghoul. Not only is she one of the leaders of Aogiri but only Arima, The One Eyed King himself, can have any chance against her (and later Kaneki).
After going to Arima, Arima attacked Keneki because he is a ghoul. He takes down Keneki and stabs him all the way to his brain.
Problem was, they were seeking the same thing - they both wanted to die at the hand of the other. Kaneki was suicidal as well, and didn’t fight as hard as he could. Arima notes this, points out that there were many times he could have killed Kaneki, that he was being sloppy. He pieced it all together.
Kaneki is only the first successful artificial half-ghoul. There were multiple before him, including Arima. Arima came the closest to being a success, but the regeneration effect in artificial half-ghouls like Kaneki and Arima causes them to waste away and age prematurely. Arima has his reputation for a reason - he does a lot of fighting, but this has its cost. Arima’s regeneration was not as efficient as Kaneki’s so the wasting happened at a faster rate.
About Haise Sasaki, I'm pretty sure he needed to consume humans. Think of him like a Cochlea detainee, he probably got his meat from dead bodies the CCG provided for him. His RC level was 2753, the RC level of a ghoul, and he was never shown eating human food. But I guess he might have been able to eat human food, since his RC level was partly suppressed. It wasn't shown clearly.
After fighting Amon, Keneki becomes pretty injured. His friend Hide helps Keneki and takes him to the coffee shop where Keneki worked, and fed himself to Keneki.
But there’s one character death that certainly sent shock waves through the Tokyo Ghoul fandom: Hide’s tragic death at the end of Season 2, as his body was carried by his best friend Kaneki through the snow-filled streets of Tokyo to the CCG.
Hide died at the end of the anime’s Season 2 in a completely different way to the manga, and then his death was retconned for the sequel series, much to the fans’ delight.

Kaneki is left to carry Hide’s lifeless body back to the CCG before going to face Kishou Arima, but that is not how things happen in the manga.

Now living under the identity of Scarecrow, Hide helped Koutarou Amon flee from Akihiro Kanou after he was turned into a one-eyed ghoul. He threw a Control Rc gas grenade, disabling the two Aogiri Tree guards restraining Amon. Afterwards, he appeared in front of Amon, sitting on the ground and called out to him with a distorted speech.
Kaneki calls Hideyoshi by the nickname "Hide," and they have been best friends since childhood. Hide seems to care greatly about Kaneki and had been watching him carefully after the incident with Rize. If Kaneki was in trouble or danger, he would do his best to support him. He cares for Kaneki immensely and did not falter to help him even after finding out about Kaneki 's transformation into a ghoul. When asked by Amon why he was willing to go so far for Kaneki, Hide outright declared that he loved Kaneki, and he didn't need any reason other than that.
Marude asked Hide if he knew how to write a will and Hide advised him that it would not be good to kill himself. Marude insulted him and told Hide it was for him. Confused, Marude explained that he would participate in the next operation as part of Division II and it would be a learning experience. People in their position rarely died, but it was advised that he write a will anyway. Their target was Anteiku and they were after a certain ghoul. Hide agreed to write a will.
After they had left Hide, Touka told Kaneki to make sure that Hide did not find out about him being a ghoul because she would kill him if that were to happen, so that the ghouls' identities would not be found out.
Kaneki noticed blood inside his mouth and realized that he ate human meat, so asked Yoshimura about what he had done and the manager replied that there was only one way to calm a hungry ghoul.
When disguised as the ghoul Scarecrow, he pairs traditional Japanese attire with a straw hat and sandals. The robe consists of a vertical striped pattern on the left side and contrasting zigzag pattern on the right, tucked into a pair of loose hakama pants. Notably, he folds the shirt right over left, in the manner reserved for burial and therefore associated with restless spirits. He pairs this with a dark-colored hat and sandals, as well as a cloth mask. The mask has a henohenomoheji-face drawn on the front.
Hide biked to the perimeter of the 11th Ward Battle to observe the events with a pair of binoculars. Unable to do anything, he could only watch. Later, he worked as a part-timer at the CCG, and was noted as an outstanding worker. He claimed to be Takizawa's grunt.
